Ingredients

						Scale

		- 1 sheet puff pastry, thawed
 - 2–3 red apples (such as Gala or Honeycrisp)
 - Juice of 1/2 lemon
 - 2 tablespoons sugar
 - 1/2 teaspoon ground cinnamon
 - 1/4 cup apricot jam
 - 2 tablespoons water
 - 1/3 cup almond flour
 - 1 tablespoon all-purpose flour
 - 2 tablespoons unsalted butter, softened
 - 2 tablespoons sugar (for almond filling)
 - 1 egg
 - 1/4 teaspoon almond extract

Instructions
- Preheat oven to 375°F (190°C). Lightly grease a tart pan or line with parchment paper.
 - Slice apples in half, core them, then cut into very thin slices (about 1/16 inch thick). Place in a bowl with lemon juice and microwave for 1-2 minutes to soften.
 - In a small bowl, mix sugar and cinnamon. Sprinkle over the apple slices and set aside.
 - In another bowl, mix almond flour, all-purpose flour, softened butter, sugar, egg, and almond extract to make the almond filling.
 - Roll out puff pastry and cut into strips (about 2 inches wide and 8 inches long).
 - Spread a thin layer of almond filling onto each strip. Line apple slices along one edge of the strip, overlapping slightly, with the red skin side sticking out above the edge.
 - Fold the other edge of the pastry strip over the apples and carefully roll the strip to form a rose shape.
 - Place each rolled tart into the tart pan or muffin tin cavity.
 - In a small saucepan, heat apricot jam with water to make a glaze. Brush over the apple roses.
 - Bake for 35–40 minutes, or until pastry is golden and apples are tender.
 - Cool slightly before serving. Optionally, dust with powdered sugar.

Notes
- Use a mandoline slicer for evenly thin apple slices.
 - Different apple varieties can give varied colors to the roses.
 - Serve with a scoop of vanilla ice cream for extra indulgence.
