		- 1 cup powdered sugar
 - 3/4 cup almond flour
 - 2 large egg whites, room temperature
 - 1/4 cup granulated sugar
 - Gel food coloring (blue, purple, pink)
 - Edible shimmer dust or luster dust (optional)
 - 1/2 cup unsalted butter, softened (for filling)
 - 1 1/2 cups powdered sugar (for filling)
 - 1 tsp vanilla extract (for filling)
 - 1–2 tbsp heavy cream (for filling)
 
Instructions
- Sift almond flour and powdered sugar together into a bowl and set aside.
 - In a clean, dry bowl, beat egg whites until foamy, then gradually add granulated sugar and beat until stiff peaks form.
 - Gently fold the dry ingredients into the meringue until the batter flows like lava (macaronage).
 - Divide batter and color each portion with different gel food colorings to create the mermaid effect.
 - Pipe shell shapes onto a parchment-lined baking sheet using a piping bag fitted with a round tip.
 - Tap the baking sheet to release air bubbles and let the macarons rest for 30-60 minutes until a skin forms.
 - Preheat oven to 300°F (150°C). Bake for 15-18 minutes until set.
 - Let macarons cool completely before removing from parchment.
 - For the filling, beat butter until creamy, then add powdered sugar, vanilla, and cream until fluffy.
 - Pipe filling onto half the shells and sandwich with another shell.
 - Dust with edible shimmer for a magical effect.

 - Avoid over-mixing or under-mixing the batter.
 - Store in an airtight container in the fridge for up to 5 days.
