  • 1 cup shredded mozzarella cheese
  • About ¼ cup garlic Parmesan sauce (e.g., Buffalo Wild Wings)

Instructions

  1. Preheat oven to 400 °F (or use air fryer at 400 °F).
  2. Toss cubed potatoes with olive oil, salt, pepper, garlic powder, and paprika; roast about 20 min until tender, shaking occasionally.
  3. Meanwhile, season chicken pieces with ½ tsp salt, ½ tsp pepper, 1 tsp paprika, 1 tsp onion powder, and 1 tsp Italian seasoning.
  4. Melt butter in a skillet over medium‑high heat; cook chicken until internal temp reaches 165 °F.
  5. Add minced garlic and garlic Parmesan sauce to skillet; stir to coat chicken well.
  6. When potatoes are done, add them to skillet; toss everything together.
  7. Sprinkle mozzarella on top; cover skillet until cheese melts or place skillet under broiler briefly.
  8. Serve hot, straight from the pan.
