Almond Croissant Bread Pudding

A rich and indulgent bread pudding made with almond croissants, soaked in a creamy custard, and baked until golden for a decadent dessert or brunch dish.

  • 4 almond croissants (preferably day-old), torn into pieces
  • 4 large eggs
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1/2 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup sliced almonds
  • Powdered sugar, for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Arrange torn almond croissant pieces evenly in the prepared dish.
  3. In a mixing bowl, whisk together eggs, milk, cream, sugar, almond extract, vanilla extract, and salt until well combined.
  4. Pour the custard mixture over the croissants, gently pressing down to ensure all pieces are soaked.
  5. Let sit for 15–20 minutes to allow the croissants to absorb the custard.
  6. Sprinkle sliced almonds over the top.
  7. Bake for 35–40 minutes, or until the custard is set and the top is golden brown.
  8. Remove from oven and cool slightly. Dust with powdered sugar before serving.

Notes

  • Day-old croissants absorb the custard better and prevent sogginess.
  • Serve warm with a drizzle of cream or a scoop of ice cream for extra indulgence.
  • Can be made ahead and reheated gently in the oven.
