Apple Cinnamon Protein Pancakes

Fluffy and wholesome apple cinnamon protein pancakes made with oats, protein powder, and fresh apples for a healthy, energizing breakfast.

Ingredients

Scale
  • 1 cup rolled oats
  • 1 scoop vanilla protein powder (about 30g)
  • 1 medium apple, grated
  • 2 large eggs
  • 1/2 cup unsweetened almond milk (or milk of choice)
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • 1 tbsp maple syrup or honey (optional)
  • Pinch of salt
  • Coconut oil or cooking spray (for cooking)

Instructions

  1. In a blender, combine rolled oats, protein powder, baking powder, cinnamon, and salt. Blend into a flour-like consistency.
  2. Add eggs, almond milk, vanilla extract, and maple syrup (if using). Blend until smooth.
  3. Stir in the grated apple by hand to keep some texture.
  4. Heat a non-stick skillet over medium heat and lightly grease with coconut oil or cooking spray.
  5. Pour about 1/4 cup of batter per pancake onto the skillet. Cook 2–3 minutes until bubbles form on top, then flip and cook another 1–2 minutes until golden.
  6. Repeat with remaining batter.
  7. Serve warm with extra apple slices, cinnamon, and a drizzle of maple syrup if desired.

Notes

  • For extra protein, add Greek yogurt as a topping.
  • Substitute grated apple with pear for a twist.
  • Store leftovers in the fridge up to 3 days or freeze for meal prep.
