- 8 oz spaghetti or soba noodles
- 1 cup shredded carrots
- 1 cup shredded red cabbage
- 1 red bell pepper, thinly sliced
- 3 green onions, sliced
- 1/4 cup chopped cilantro
- 1/4 cup sesame seeds, toasted
- 1/4 cup soy sauce
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 2 tbsp olive oil
- 1 tbsp honey or maple syrup
- 1 tsp grated fresh ginger
- 1 garlic clove, minced
- 1/4 tsp red pepper flakes (optional)
- Cook the noodles according to package instructions, drain, and rinse under cold water.
- In a large bowl, combine the carrots, cabbage, bell pepper, green onions, and cilantro.
- In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, olive oil, honey, ginger, garlic, and red pepper flakes.
- Toss the cooled noodles with the vegetables.
- Pour the sesame dressing over the salad and mix until well coated.
- Top with toasted sesame seeds before serving.
Notes
- This salad can be made ahead and chilled for 1–2 hours for best flavor.
- For extra protein, add grilled chicken, shrimp, or tofu.
- Adjust spice level by adding more or less red pepper flakes.
