Asian Sesame Noodle Salad

A refreshing and flavorful cold noodle salad tossed with crisp vegetables and a savory sesame dressing, perfect for a light lunch or side dish.

  • 8 oz spaghetti or soba noodles
  • 1 cup shredded carrots
  • 1 cup shredded red cabbage
  • 1 red bell pepper, thinly sliced
  • 3 green onions, sliced
  • 1/4 cup chopped cilantro
  • 1/4 cup sesame seeds, toasted
  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 2 tbsp olive oil
  • 1 tbsp honey or maple syrup
  • 1 tsp grated fresh ginger
  • 1 garlic clove, minced
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Cook the noodles according to package instructions, drain, and rinse under cold water.
  2. In a large bowl, combine the carrots, cabbage, bell pepper, green onions, and cilantro.
  3. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, olive oil, honey, ginger, garlic, and red pepper flakes.
  4. Toss the cooled noodles with the vegetables.
  5. Pour the sesame dressing over the salad and mix until well coated.
  6. Top with toasted sesame seeds before serving.

Notes

  • This salad can be made ahead and chilled for 1–2 hours for best flavor.
  • For extra protein, add grilled chicken, shrimp, or tofu.
  • Adjust spice level by adding more or less red pepper flakes.
