Asian Slaw with Sesame Dressing

A crunchy, colorful Asian slaw tossed in a tangy sesame dressing. Perfect as a side dish or a light, refreshing meal.

  • 3 cups shredded green cabbage
  • 2 cups shredded red cabbage
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 3 green onions, chopped
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup toasted sliced almonds
  • 1 tablespoon sesame seeds
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon sesame oil
  • 2 tablespoons olive oil
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced

Instructions

  1. In a large mixing bowl, combine the green cabbage, red cabbage, carrots, red bell pepper, green onions, and cilantro.
  2. In a separate small bowl or jar, whisk together the rice vinegar, soy sauce, honey (or maple syrup), sesame oil, olive oil, grated ginger, and minced garlic to make the dressing.
  3. Pour the dressing over the slaw mixture and toss until everything is evenly coated.
  4. Top with toasted almonds and sesame seeds.
  5. Let sit for 10–15 minutes before serving to allow flavors to meld.

Notes

  • For a vegan version, use maple syrup instead of honey.
  • You can prepare the dressing ahead of time and store it in the fridge for up to a week.
  • Add grilled chicken or tofu to make it a full meal.
