Avocado Cucumber Salad

A refreshing, light, and nutritious salad made with creamy avocado, crisp cucumber, and a zesty dressing, perfect for a quick side dish or healthy snack.

Ingredients

  • 2 ripe avocados, diced
  • 1 large cucumber, thinly sliced
  • 1/4 red onion, thinly sliced
  • 2 tbsp fresh lemon juice
  • 2 tbsp olive oil
  • 1 tbsp fresh dill, chopped (optional)
  • Salt and black pepper to taste

Instructions

  1. Peel and dice the avocados, then place them in a mixing bowl.
  2. Slice the cucumber thinly and add it to the bowl.
  3. Add the sliced red onion to the mixture.
  4. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
  5. Pour the dressing over the avocado, cucumber, and onion, then toss gently to combine.
  6. Sprinkle with fresh dill, if using, and serve immediately.

Notes

  • For extra crunch, add cherry tomatoes or radishes.
  • Best served fresh to prevent avocados from browning.
  • You can substitute lime juice for lemon juice for a tangier flavor.
