Baked Zucchini Fries

Crispy and healthy baked zucchini fries coated with breadcrumbs and Parmesan, perfect as a snack or side dish.

  • 2 medium zucchini
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (panko or regular)
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Cooking spray or olive oil spray

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly coat with cooking spray.
  2. Cut zucchini into fry-shaped sticks.
  3. Set up a dredging station: place flour in one bowl, beaten eggs in another, and a mixture of breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper in a third.
  4. Dredge each zucchini stick in flour, then dip in egg, and finally coat with breadcrumb mixture.
  5. Arrange zucchini fries in a single layer on the prepared baking sheet.
  6. Lightly spray the tops with cooking spray for extra crispiness.
  7. Bake for 20–25 minutes, flipping halfway through, until golden brown and crispy.
  8. Serve warm with marinara or ranch dipping sauce.

Notes

  • For extra crispiness, use panko breadcrumbs.
  • Make it gluten-free by using gluten-free breadcrumbs and flour.
  • Best served immediately as they lose crispiness when stored.
