BBQ Chicken Salad Without Sauces

A fresh and flavorful BBQ chicken salad combining smoky grilled chicken, crisp vegetables, and a tangy barbecue dressing for a satisfying and healthy meal.

  • 2 cups cooked chicken breast, shredded or diced
  • 1/4 cup barbecue sauce
  • 4 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup canned corn, drained
  • 1 cup canned black beans, rinsed and drained
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup ranch dressing
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a skillet, heat olive oil over medium heat. Add chicken and barbecue sauce, tossing to coat. Cook for 2–3 minutes until warmed through.
  2. In a large salad bowl, arrange the lettuce as the base.
  3. Top with cherry tomatoes, corn, black beans, red onion, and shredded cheese.
  4. Add the BBQ chicken on top of the vegetables.
  5. Drizzle ranch dressing over the salad.
  6. Season with salt and pepper as desired and toss gently before serving.

Notes

  • You can use grilled chicken for extra smoky flavor.
  • Try swapping cheddar cheese for pepper jack for a spicy kick.
  • For a lighter version, use Greek yogurt-based ranch dressing.
