BBQ Chicken Salad Without Sauces

- 2 cups cooked chicken breast, shredded or diced
- 1/4 cup barbecue sauce
- 4 cups romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 cup canned corn, drained
- 1 cup canned black beans, rinsed and drained
- 1/2 cup red onion, thinly sliced
- 1/2 cup shredded cheddar cheese
- 1/4 cup ranch dressing
- 1 tablespoon olive oil
- Salt and pepper to taste
- In a skillet, heat olive oil over medium heat. Add chicken and barbecue sauce, tossing to coat. Cook for 2–3 minutes until warmed through.
- In a large salad bowl, arrange the lettuce as the base.
- Top with cherry tomatoes, corn, black beans, red onion, and shredded cheese.
- Add the BBQ chicken on top of the vegetables.
- Drizzle ranch dressing over the salad.
- Season with salt and pepper as desired and toss gently before serving.

- You can use grilled chicken for extra smoky flavor.
- Try swapping cheddar cheese for pepper jack for a spicy kick.
