BBQ Pulled Chicken Sandwiches

BBQ Pulled Chicken Sandwiches are a delicious, easy-to-make comfort food featuring shredded chicken coated in tangy barbecue sauce and served on soft sandwich buns.

  • 4 boneless, skinless chicken breasts
  • 1 cup barbecue sauce (plus more for serving)
  • 1/2 cup chicken broth or water
  • 1 tablespoon brown sugar (optional)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 sandwich buns
  • Coleslaw (optional, for topping)

Instructions

  1. Place chicken breasts in a slow cooker or large pot.
  2. Add barbecue sauce, chicken broth, brown sugar, smoked paprika, garlic powder, salt, and pepper.
  3. Cook on low for 6-7 hours or high for 3-4 hours (or simmer in pot for 45-60 minutes until chicken is tender).
  4. Once cooked, shred the chicken using two forks.
  5. Return the shredded chicken to the sauce and stir to coat well.
  6. Toast sandwich buns if desired.
  7. Serve pulled chicken on buns and top with coleslaw, if using.
  8. Serve with extra barbecue sauce on the side if desired.

Notes

  • You can use rotisserie chicken for a quicker version.
  • Coleslaw adds a crunchy texture and tangy flavor contrast.
  • Store leftovers in the fridge for up to 3 days.
  • Freezes well for up to 2 months.
