- 1 lb beef sirloin or tenderloin, thinly sliced
- 2 tbsp olive oil
- 1 tbsp butter
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1 tbsp all-purpose flour
- 1 cup beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- 1/2 cup sour cream
- Salt and black pepper to taste
- 2 tbsp fresh parsley, chopped (optional, for garnish)
- Cooked egg noodles or rice, for serving
- Heat olive oil in a large skillet over medium-high heat. Add beef slices and sear until browned. Remove from pan and set aside.
- In the same skillet, melt butter. Add chopped onion and cook until soft, about 3 minutes.
- Add garlic and mushrooms; sauté until mushrooms are browned and tender.
- Sprinkle flour over the vegetables and stir well to combine.
- Gradually add beef broth while stirring, then add Worcestershire sauce and Dijon mustard. Bring to a simmer and cook until the sauce thickens, about 5 minutes.
- Return the beef to the pan and cook for 2-3 more minutes, just until heated through.
- Stir in sour cream and cook on low heat until warmed. Do not boil.
- Season with salt and pepper to taste.
- Serve over cooked egg noodles or rice and garnish with chopped parsley if desired.
Notes
- Do not overcook the beef to keep it tender.
- Use full-fat sour cream for a richer sauce.
- You can substitute Greek yogurt for a lighter version.
- Use cremini mushrooms for deeper flavor.
