Beef Stroganoff

Beef Stroganoff is a classic Russian dish featuring tender strips of beef sautéed with mushrooms and onions in a rich, creamy sour cream sauce, typically served over egg noodles or rice.

  • 1 lb beef sirloin or tenderloin, thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 tbsp all-purpose flour
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1/2 cup sour cream
  • Salt and black pepper to taste
  • 2 tbsp fresh parsley, chopped (optional, for garnish)
  • Cooked egg noodles or rice, for serving

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add beef slices and sear until browned. Remove from pan and set aside.
  2. In the same skillet, melt butter. Add chopped onion and cook until soft, about 3 minutes.
  3. Add garlic and mushrooms; sauté until mushrooms are browned and tender.
  4. Sprinkle flour over the vegetables and stir well to combine.
  5. Gradually add beef broth while stirring, then add Worcestershire sauce and Dijon mustard. Bring to a simmer and cook until the sauce thickens, about 5 minutes.
  6. Return the beef to the pan and cook for 2-3 more minutes, just until heated through.
  7. Stir in sour cream and cook on low heat until warmed. Do not boil.
  8. Season with salt and pepper to taste.
  9. Serve over cooked egg noodles or rice and garnish with chopped parsley if desired.

Notes

  • Do not overcook the beef to keep it tender.
  • Use full-fat sour cream for a richer sauce.
  • You can substitute Greek yogurt for a lighter version.
  • Use cremini mushrooms for deeper flavor.
