  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1/2 red onion, diced
  • 1 green bell pepper, chopped
  • 1 cup shredded cheddar cheese
  • 4 cups romaine or iceberg lettuce, chopped
  • 1 1/2 cups crushed Nacho Cheese Doritos
  • 1/2 cup ranch dressing or taco-flavored dressing
  • 1/2 avocado, diced (optional)
  • Fresh cilantro, chopped (optional for garnish)

Instructions

  1. In a large mixing bowl, combine the black beans, cherry tomatoes, corn, red onion, green bell pepper, and shredded cheddar cheese.
  2. Add the chopped lettuce and mix gently.
  3. Pour the dressing over the salad and toss to combine evenly.
  4. Just before serving, fold in the crushed Doritos to retain their crunch.
  5. Top with diced avocado and chopped cilantro if using.
  6. Serve immediately for best texture.
