Black Bean Tacos

Flavorful vegetarian tacos made with seasoned black beans, fresh toppings, and soft tortillas for a quick and healthy meal.

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • 1 can (15 oz) black beans, drained and rinsed
  • 1/4 cup vegetable broth or water
  • Salt and pepper, to taste
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheese (optional)
  • 1/4 cup sour cream or vegan alternative
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced onion and sauté until softened, about 3-4 minutes.
  3. Stir in garlic, cumin, chili powder, and smoked paprika; cook for 30 seconds until fragrant.
  4. Add black beans and vegetable broth; stir and simmer for 5-6 minutes, mashing some beans for texture.
  5. Season with salt and pepper to taste.
  6. Warm tortillas in a dry skillet or microwave.
  7. Spoon the black bean mixture into tortillas and top with lettuce, tomatoes, cheese (if using), sour cream, and cilantro.
  8. Serve with lime wedges on the side.

Notes

  • Use gluten-free tortillas for a gluten-free option.
  • Double the spices for extra flavor.
  • Can be made vegan by skipping dairy toppings.
  • Add avocado or salsa for more toppings.
