- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon smoked paprika
- 1 can (15 oz) black beans, drained and rinsed
- 1/4 cup vegetable broth or water
- Salt and pepper, to taste
- 8 small corn or flour tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup shredded cheese (optional)
- 1/4 cup sour cream or vegan alternative
- Fresh cilantro, for garnish
- Lime wedges, for serving
- Heat olive oil in a skillet over medium heat.
- Add diced onion and sauté until softened, about 3-4 minutes.
- Stir in garlic, cumin, chili powder, and smoked paprika; cook for 30 seconds until fragrant.
- Add black beans and vegetable broth; stir and simmer for 5-6 minutes, mashing some beans for texture.
- Season with salt and pepper to taste.
- Warm tortillas in a dry skillet or microwave.
- Spoon the black bean mixture into tortillas and top with lettuce, tomatoes, cheese (if using), sour cream, and cilantro.
- Serve with lime wedges on the side.
