Black Forest Cake

A rich and decadent German dessert made with layers of chocolate sponge cake, whipped cream, and cherries, traditionally topped with chocolate shavings and more cherries.

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 4 large eggs
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 1 can (14 oz) pitted dark sweet cherries, drained (reserve syrup)
  • 1/4 cup kirsch (cherry brandy), optional
  • 2 cups heavy whipping cream
  • 1/3 cup powdered sugar
  • 1 tsp vanilla extract (for whipped cream)
  • Chocolate shavings (for garnish)
  • Maraschino or fresh cherries (for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans.
  2. In a bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, beat the eggs and sugar until light and fluffy. Add oil and vanilla extract, mixing well.
  4. Alternate adding dry ingredients and buttermilk to the egg mixture, starting and ending with dry ingredients. Mix until just combined.
  5. Divide the batter evenly between the pans and bake for 25–30 minutes or until a toothpick comes out clean.
  6. Cool cakes in pans for 10 minutes, then transfer to wire racks to cool completely.
  7. Drain cherries and reserve the syrup. If using, mix syrup with kirsch.
  8. Whip the cream with powdered sugar and vanilla extract until stiff peaks form.
  9. Slice each cake layer in half horizontally to make four layers in total.
  10. Place one cake layer on a serving plate. Brush with cherry syrup. Spread whipped cream and top with some cherries.
  11. Repeat with remaining layers, finishing with whipped cream on top and sides.
  12. Decorate with chocolate shavings and cherries on top.
  13. Chill cake for at least 2 hours before serving.

Notes

  • You can substitute kirsch with cherry juice for a non-alcoholic version.
  • Use fresh cherries if in season for enhanced flavor.
  • For best results, chill your mixing bowl and beaters before whipping cream.
