- 2 cups fresh blueberries
- 2 ripe peaches, sliced
- 4 cups mixed salad greens
- 1/2 cup crumbled feta cheese
- 1/4 cup toasted slivered almonds
- 2 tablespoons fresh mint, chopped
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 tablespoon fresh lemon juice
- Salt and freshly ground black pepper, to taste
- In a small bowl, whisk together olive oil, honey, lemon juice, salt, and pepper to make the vinaigrette.
- In a large bowl, combine salad greens, blueberries, peach slices, and mint.
- Drizzle the vinaigrette over the salad and gently toss to coat.
- Sprinkle crumbled feta and toasted almonds on top.
- Serve immediately, garnished with extra mint if desired.
