Blueberry Peach Feta Salad

A bright and refreshing summer salad combining juicy blueberries and peaches with creamy feta, tossed in a light honey-lemon vinaigrette.

Ingredients

  • 2 cups fresh blueberries
  • 2 ripe peaches, sliced
  • 4 cups mixed salad greens
  • 1/2 cup crumbled feta cheese
  • 1/4 cup toasted slivered almonds
  • 2 tablespoons fresh mint, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 tablespoon fresh lemon juice
  • Salt and freshly ground black pepper, to taste

Instructions

  1. In a small bowl, whisk together olive oil, honey, lemon juice, salt, and pepper to make the vinaigrette.
  2. In a large bowl, combine salad greens, blueberries, peach slices, and mint.
  3. Drizzle the vinaigrette over the salad and gently toss to coat.
  4. Sprinkle crumbled feta and toasted almonds on top.
  5. Serve immediately, garnished with extra mint if desired.

Notes

  • Use very ripe peaches for maximum sweetness and flavor.
  • Chill ingredients and bowls ahead of time for an extra-refreshing salad.
  • Swap almonds for pecans or walnuts if preferred.
  • Can be prepared up to 15 minutes in advance; keep dressing separate until just before serving.
