Blueberry Yogurt Bark

A refreshing and healthy frozen snack made with Greek yogurt, fresh blueberries, and a touch of sweetness, perfect for summer or a light dessert.

Ingredients

  • 2 cups plain Greek yogurt
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 2 tablespoons granola (optional)

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a bowl, mix the Greek yogurt, honey (or maple syrup), and vanilla extract until well combined.
  3. Spread the yogurt mixture evenly onto the prepared baking sheet to about 1/4 inch thickness.
  4. Sprinkle the blueberries evenly over the yogurt. Add granola if using.
  5. Freeze for at least 3 hours or until fully set.
  6. Once frozen, break the bark into pieces and enjoy.
  7. Store remaining bark in an airtight container in the freezer.

Notes

  • You can substitute other berries or fruits as desired.
  • Use dairy-free yogurt for a vegan option.
  • Drizzle with melted dark chocolate for added flavor.
