- 2 cups plain Greek yogurt
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
- 2 tablespoons granola (optional)
- Line a baking sheet with parchment paper.
- In a bowl, mix the Greek yogurt, honey (or maple syrup), and vanilla extract until well combined.
- Spread the yogurt mixture evenly onto the prepared baking sheet to about 1/4 inch thickness.
- Sprinkle the blueberries evenly over the yogurt. Add granola if using.
- Freeze for at least 3 hours or until fully set.
- Once frozen, break the bark into pieces and enjoy.
- Store remaining bark in an airtight container in the freezer.
