Breakfast Burrito

A hearty and customizable breakfast burrito filled with scrambled eggs, cheese, and your choice of protein and veggies, all wrapped in a warm tortilla.

Ingredients

  • 4 large eggs
  • 1/4 cup milk
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup cooked breakfast sausage or bacon, crumbled
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 2 large flour tortillas
  • 1 tablespoon butter or oil
  • Salt and pepper to taste
  • Optional: salsa, avocado, hot sauce

Instructions

  1. In a bowl, whisk together eggs, milk, salt, and pepper.
  2. Heat butter or oil in a skillet over medium heat. Add onions and bell peppers; sauté until softened.
  3. Add the egg mixture to the skillet and scramble until cooked through.
  4. Stir in cooked sausage or bacon and remove from heat.
  5. Warm tortillas in a pan or microwave.
  6. Divide the egg mixture between the tortillas. Top with shredded cheese and optional toppings like salsa or avocado.
  7. Roll each tortilla into a burrito by folding the sides and rolling tightly from the bottom.
  8. Serve immediately or wrap in foil to keep warm.

Notes

  • Use whole wheat or low-carb tortillas for a healthier version.
  • Can be made ahead and frozen for meal prep.
  • Swap out meat for tofu or black beans for a vegetarian option.
