Breakfast Burrito

A hearty and delicious Breakfast Burrito packed with eggs, cheese, vegetables, and your choice of protein, wrapped in a warm tortilla for a perfect morning meal.

Ingredients

  • 4 large eggs
  • 1/4 cup milk
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1 tbsp butter or oil
  • 1/2 cup cooked and crumbled breakfast sausage or bacon
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped onions
  • 2 large flour tortillas (10-inch)
  • 1/4 cup salsa (optional)
  • 1/4 avocado, sliced (optional)

Instructions

  1. In a bowl, whisk together eggs, milk, salt, and pepper.
  2. Heat butter or oil in a nonstick skillet over medium heat. Add onions and bell peppers, cooking until softened (about 3-4 minutes).
  3. Pour in the egg mixture and cook, stirring gently until scrambled and cooked through.
  4. Stir in the cooked sausage or bacon and remove from heat.
  5. Warm tortillas in a pan or microwave until soft and pliable.
  6. Divide the egg mixture between the two tortillas.
  7. Top each with shredded cheese, salsa, and avocado if using.
  8. Fold in the sides and roll up tightly to form a burrito.
  9. Optional: Grill the burritos seam-side down in a hot skillet for 1-2 minutes to seal and crisp the outside.
  10. Serve warm.

Notes

  • You can substitute sausage with plant-based alternatives for a vegetarian option.
  • Use whole wheat tortillas for added fiber.
  • Can be made ahead and frozen for meal prep.
