  • 4 small flour or corn tortillas
  • 1 tablespoon butter or oil
  • Optional toppings: salsa, avocado, cilantro, hot sauce

Instructions

  1. In a bowl, whisk together the eggs, milk, salt, and pepper.
  2. Heat butter or oil in a non-stick skillet over medium heat.
  3. Sauté the onions and bell peppers until softened, about 3-4 minutes.
  4. Add the egg mixture to the skillet and cook, stirring gently, until scrambled and fully cooked.
  5. Remove from heat and stir in the shredded cheddar cheese.
  6. Warm the tortillas in a skillet or microwave until pliable.
  7. Spoon the scrambled egg mixture evenly onto each tortilla.
  8. Add optional toppings such as salsa, avocado, or cilantro.
  9. Fold the tortillas and serve immediately.
