- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups chocolate chips
- 12 brownie squares (pre-baked or store-bought, about 1x1 inch each)
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
- Add eggs and vanilla extract and mix until well combined.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chocolate chips.
- Scoop about 2 tablespoons of cookie dough and flatten it slightly in your hand.
- Place a brownie square in the center and wrap the dough around it, sealing completely.
- Place cookie balls onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12–14 minutes or until the edges are golden brown and the centers are set.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
- Chill cookie dough for 20 minutes if it becomes too soft to handle.
- Store cookies in an airtight container at room temperature for up to 5 days.
- You can use boxed brownie mix to make the centers ahead of time.
