Bruschetta with Tomato & Basil

A classic Italian appetizer featuring toasted bread topped with fresh tomatoes, basil, garlic, and olive oil. Perfect as a starter or snack.

  • 1 baguette or rustic Italian bread, sliced into 1/2-inch pieces
  • 4 ripe tomatoes, diced
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil leaves, chopped
  • 3 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar (optional)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Arrange bread slices on a baking sheet and lightly brush with olive oil.
  3. Toast in the oven for 5–7 minutes, until golden and crisp.
  4. In a mixing bowl, combine diced tomatoes, garlic, basil, olive oil, balsamic vinegar (if using), salt, and pepper.
  5. Remove bread from oven and let cool slightly.
  6. Spoon tomato mixture over each toasted bread slice just before serving.

Notes

  • For extra flavor, rub toasted bread with a clove of garlic before topping.
  • Use the ripest tomatoes available for best results.
  • Serve immediately to keep bread from getting soggy.
