- 1 baguette or rustic Italian bread, sliced into 1/2-inch pieces
- 4 ripe tomatoes, diced
- 2 cloves garlic, minced
- 1/4 cup fresh basil leaves, chopped
- 3 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar (optional)
- Salt, to taste
- Black pepper, to taste
- Preheat oven to 400°F (200°C).
- Arrange bread slices on a baking sheet and lightly brush with olive oil.
- Toast in the oven for 5–7 minutes, until golden and crisp.
- In a mixing bowl, combine diced tomatoes, garlic, basil, olive oil, balsamic vinegar (if using), salt, and pepper.
- Remove bread from oven and let cool slightly.
- Spoon tomato mixture over each toasted bread slice just before serving.
Notes
- For extra flavor, rub toasted bread with a clove of garlic before topping.
- Use the ripest tomatoes available for best results.
- Serve immediately to keep bread from getting soggy.
