Buffalo Cauliflower Bites

Crispy, spicy, and tangy Buffalo Cauliflower Bites are a delicious vegetarian alternative to traditional buffalo wings. Perfect as an appetizer, snack, or party dish.

  • 1 medium head cauliflower, cut into bite-sized florets
  • 1 cup all-purpose flour
  • 1 cup water or milk (dairy or non-dairy)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup buffalo sauce
  • 2 tbsp unsalted butter (or vegan butter)
  • Cooking spray or oil for baking

Instructions

  1. Preheat the oven to 450°F (230°C) and line a baking sheet with parchment paper. Lightly grease with cooking spray.
  2. In a mixing bowl, whisk together flour, water (or milk), garlic powder, onion powder, smoked paprika, salt, and black pepper until smooth.
  3. Dip each cauliflower floret into the batter, letting excess drip off, then place on the prepared baking sheet in a single layer.
  4. Bake for 20 minutes, flipping halfway through, until lightly golden and crispy.
  5. In a saucepan, melt butter and stir in buffalo sauce until combined.
  6. Remove cauliflower from the oven and toss or brush with the buffalo sauce mixture.
  7. Return to the oven and bake an additional 10 minutes until edges are crispy and sauce is absorbed.
  8. Serve immediately with ranch or blue cheese dressing and celery sticks, if desired.

Notes

  • For extra crispiness, bake on a wire rack set over a baking sheet.
  • Make it vegan by using non-dairy milk and vegan butter.
  • Adjust spice level by choosing mild or hot buffalo sauce.
  • Best enjoyed fresh, but can be reheated in the oven to crisp back up.
