- 1 medium head cauliflower, cut into bite-sized florets
 
- 1 cup all-purpose flour
 
- 1 cup water or milk (dairy or non-dairy)
 
- 1 tsp garlic powder
 
- 1 tsp onion powder
 
- 1/2 tsp smoked paprika
 
- 1/2 tsp salt
 
- 1/4 tsp black pepper
 
- 1 cup buffalo sauce
 
- 2 tbsp unsalted butter (or vegan butter)

- Preheat the oven to 450°F (230°C) and line a baking sheet with parchment paper. Lightly grease with cooking spray.
 
- In a mixing bowl, whisk together flour, water (or milk), garlic powder, onion powder, smoked paprika, salt, and black pepper until smooth.
 
- Dip each cauliflower floret into the batter, letting excess drip off, then place on the prepared baking sheet in a single layer.
 
- Bake for 20 minutes, flipping halfway through, until lightly golden and crispy.
 
- In a saucepan, melt butter and stir in buffalo sauce until combined.
 
- Remove cauliflower from the oven and toss or brush with the buffalo sauce mixture.
 
- Return to the oven and bake an additional 10 minutes until edges are crispy and sauce is absorbed.
