Buffalo Cauliflower Bites

Buffalo cauliflower bites are a delicious vegetarian alternative to buffalo wings, made by roasting cauliflower florets coated in a spicy buffalo sauce. They’re perfect as a snack, appetizer, or party food.

  • 1 head cauliflower, cut into bite-sized florets
  • 1 cup all-purpose flour
  • 1 cup water
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 3/4 cup buffalo sauce
  • 2 tbsp unsalted butter, melted (or vegan butter)
  • Cooking spray or oil for baking sheet

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly grease it with cooking spray or oil.
  2. In a large bowl, whisk together the flour, water, garlic powder, paprika, salt, and pepper until smooth.
  3. Dip the cauliflower florets into the batter, coating each piece evenly. Shake off excess batter and place them on the prepared baking sheet in a single layer.
  4. Bake for 20 minutes, flipping halfway through, until golden and crispy.
  5. In a small bowl, mix the buffalo sauce with melted butter.
  6. Remove the cauliflower from the oven and toss with the buffalo sauce mixture until evenly coated.
  7. Return the coated cauliflower to the baking sheet and bake for another 10–15 minutes, until edges are crispy and sauce is slightly caramelized.
  8. Let cool slightly before serving. Serve with celery sticks and ranch or blue cheese dressing, if desired.

Notes

  • For extra crispiness, broil for 2–3 minutes after the second bake.
  • To make it vegan, use plant-based butter and vegan dipping sauce.
  • Adjust the buffalo sauce amount based on desired spiciness.
