- 1 head cauliflower, cut into bite-sized florets
 
- 1 cup all-purpose flour
 
- 1 cup water
 
- 1 tsp garlic powder
 
- 1/2 tsp paprika
 
- 1/4 tsp salt
 
- 1/4 tsp black pepper
 
- 3/4 cup buffalo sauce
 
- 2 tbsp unsalted butter, melted (or vegan butter)

- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly grease it with cooking spray or oil.
 
- In a large bowl, whisk together the flour, water, garlic powder, paprika, salt, and pepper until smooth.
 
- Dip the cauliflower florets into the batter, coating each piece evenly. Shake off excess batter and place them on the prepared baking sheet in a single layer.
 
- Bake for 20 minutes, flipping halfway through, until golden and crispy.
 
- In a small bowl, mix the buffalo sauce with melted butter.
 
- Remove the cauliflower from the oven and toss with the buffalo sauce mixture until evenly coated.
 
- Return the coated cauliflower to the baking sheet and bake for another 10–15 minutes, until edges are crispy and sauce is slightly caramelized.
 
- Let cool slightly before serving. Serve with celery sticks and ranch or blue cheese dressing, if desired.

- For extra crispiness, broil for 2–3 minutes after the second bake.
 
- To make it vegan, use plant-based butter and vegan dipping sauce.
