Caprese Chicken Sandwich with Basil Pesto Mayo

A delicious and fresh sandwich with grilled chicken, mozzarella, tomatoes, and basil pesto mayo, served on a toasted bun.

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 2 hamburger buns, toasted
  • 2 slices fresh mozzarella cheese
  • 1 large tomato, sliced
  • 1/4 cup fresh basil pesto
  • 1/4 cup mayonnaise
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat a grill or grill pan over medium-high heat.
  2. Brush chicken breasts with olive oil and season with salt and pepper.
  3. Grill the chicken for 5-6 minutes per side, or until fully cooked and internal temperature reaches 165°F (74°C).
  4. While the chicken is cooking, mix the basil pesto and mayonnaise together in a small bowl to make the pesto mayo.
  5. Once the chicken is cooked, assemble the sandwich: spread the pesto mayo on the toasted buns.
  6. Place a slice of mozzarella cheese on each chicken breast and return to the grill for 1-2 minutes to melt the cheese.
  7. Assemble the sandwich by placing the grilled chicken with melted mozzarella on the bottom bun, followed by tomato slices and fresh basil leaves.
  8. Top with the other toasted bun and serve immediately.

Notes

  • For extra flavor, you can add balsamic glaze to the sandwich.
  • Feel free to use store-bought pesto if you’re short on time.
  • Grilling the chicken adds a smoky flavor, but you can also pan-fry or bake the chicken if preferred.
