Caprese Stuffed Avocados

Creamy avocado halves filled with fresh mozzarella, cherry tomatoes, basil, and a drizzle of balsamic glaze for a light, flavorful Caprese-inspired appetizer.

Ingredients

  • 2 ripe but firm avocados, halved and pitted
  • 1 cup cherry tomatoes, quartered
  • 4 oz fresh mozzarella balls (bocconcini), halved
  • 10 fresh basil leaves, thinly sliced
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp balsamic glaze (plus extra for drizzling)
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Arrange avocado halves on a serving platter, cut side up.
  2. In a medium bowl, gently toss cherry tomatoes, mozzarella, and basil with olive oil and balsamic glaze. Season with salt and pepper.
  3. Spoon the tomato-mozzarella mixture into each avocado half, dividing evenly.
  4. Drizzle additional balsamic glaze over the filled avocados.
  5. Garnish with extra basil leaves and serve immediately.

Notes

  • Use ripe but firm avocados to maintain shape.
  • Prepare just before serving to prevent avocado browning.
  • For extra flavor, sprinkle with flaky sea salt.
  • Substitute balsamic glaze with a pesto drizzle if desired.
