- 2 ripe but firm avocados, halved and pitted
- 1 cup cherry tomatoes, quartered
- 4 oz fresh mozzarella balls (bocconcini), halved
- 10 fresh basil leaves, thinly sliced
- 2 tbsp extra-virgin olive oil
- 1 tbsp balsamic glaze (plus extra for drizzling)
- Salt and freshly ground black pepper, to taste
- Arrange avocado halves on a serving platter, cut side up.
- In a medium bowl, gently toss cherry tomatoes, mozzarella, and basil with olive oil and balsamic glaze. Season with salt and pepper.
- Spoon the tomato-mozzarella mixture into each avocado half, dividing evenly.
- Drizzle additional balsamic glaze over the filled avocados.
- Garnish with extra basil leaves and serve immediately.
