  • 2 cups cooked carnitas (shredded pork)
  • 4 large eggs
  • 1 tbsp butter or oil
  • 4 small corn or flour tortillas
  • 1/2 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 1/2 cup pico de gallo or salsa
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup diced avocado or guacamole
  • 1 lime, cut into wedges
  • Salt and pepper to taste

Instructions

  1. Warm the carnitas in a skillet over medium heat until heated through and slightly crispy.
  2. In a bowl, whisk the eggs with a pinch of salt and pepper. Heat butter or oil in a skillet, then scramble the eggs until just set.
  3. Warm the tortillas in a dry skillet or directly over a gas flame until soft and pliable.
  4. Assemble the tacos by layering carnitas and scrambled eggs onto each tortilla.
  5. Top with shredded cheese, pico de gallo, avocado, and cilantro.
  6. Serve immediately with lime wedges on the side.

Notes

  • You can substitute carnitas with leftover pulled pork or rotisserie chicken.
  • Add pickled onions or jalapeños for extra flavor and spice.
  • For a lighter option, use egg whites instead of whole eggs.
