Carrot Cake with Cream Cheese Frosting

A moist and flavorful carrot cake topped with rich and tangy cream cheese frosting. Perfect for celebrations or a comforting dessert.

  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups grated carrots
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup chopped walnuts (optional)
  • 1/2 cup raisins (optional)
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. In a large bowl, beat together granulated sugar, brown sugar, and oil until well combined.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. Gradually mix in the dry ingredients until just combined.
  6. Fold in grated carrots, crushed pineapple, and if using, walnuts and raisins.
  7. Divide the batter evenly between the prepared pans and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  9. To make the frosting, beat together cream cheese and butter until smooth and creamy.
  10. Add powdered sugar gradually, beating until fluffy. Mix in vanilla extract.
  11. Frost the top of one cake layer, stack the second layer on top, and frost the top and sides of the cake.

Notes

  • You can make this cake a day in advance; it tastes even better the next day.
  • Store in the refrigerator due to the cream cheese frosting.
  • Chopped pecans can be used instead of walnuts.
