Cherry-Infused Desserts

Ingredients

  • 2 cups fresh or frozen cherries, pitted
  • 1/2 cup granulated sugar
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 1/2 tsp salt
  • Whipped cream or vanilla ice cream for serving (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a saucepan, combine cherries, granulated sugar, cornstarch, and lemon juice. Cook over medium heat until the mixture thickens and becomes glossy. Stir in vanilla and almond extracts, then remove from heat.
  3. In a mixing bowl, combine flour, butter, powdered sugar, and salt until a dough forms.
  4. Press the dough into a greased baking dish to form a crust layer.
  5. Pour the cherry mixture over the crust and spread evenly.
  6. Bake for 30–35 minutes or until the edges are golden and the filling is bubbly.
  7. Allow to cool before serving. Serve with whipped cream or ice cream if desired.

Notes

  • Use tart cherries for a more intense cherry flavor.
  • Frozen cherries can be used; just thaw and drain before cooking.
  • The dessert can be stored in the fridge for up to 3 days.
