  • 2 chicken breasts, boneless and skinless
  • 1 ripe mango, diced
  • 2 cups cooked jasmine rice
  • 1/2 red bell pepper, sliced
  • 1/2 cucumber, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish
  • 1 tablespoon sesame seeds (optional)

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a skillet over medium heat and cook the chicken for 5-7 minutes per side until fully cooked. Let rest, then slice.
  3. In a small bowl, mix soy sauce, honey, and lime juice to make the dressing.
  4. Arrange cooked rice in bowls and top with sliced chicken, diced mango, red bell pepper, and cucumber.
  5. Drizzle with dressing and garnish with fresh cilantro and sesame seeds if using.
  6. Serve immediately.

Notes

  • You can substitute chicken with tofu for a vegetarian version.
  • Use brown rice or quinoa for a healthier grain option.
  • Add a bit of chili sauce if you like heat.
