- 1 ripe mango, diced
- 2 cups cooked jasmine rice
- 1/2 red bell pepper, sliced
- 1/2 cucumber, sliced
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon lime juice
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Fresh cilantro, for garnish
- 1 tablespoon sesame seeds (optional)
- Season chicken breasts with salt and pepper.
- Heat olive oil in a skillet over medium heat and cook the chicken for 5-7 minutes per side until fully cooked. Let rest, then slice.
- In a small bowl, mix soy sauce, honey, and lime juice to make the dressing.
- Arrange cooked rice in bowls and top with sliced chicken, diced mango, red bell pepper, and cucumber.
- Drizzle with dressing and garnish with fresh cilantro and sesame seeds if using.
- Serve immediately.
