Chicken Avocado Lettuce Boats

A quick and healthy lettuce boat recipe featuring creamy mashed avocado mixed with shredded chicken and fresh veggies, ready in just 5 minutes.

  • 46 romaine lettuce leaves
  • 1 medium avocado
  • ½ lemon or lime, juiced
  • 1 cup cooked chicken, shredded or cubed
  • 1 roma tomato, diced
  • 2 tablespoons chopped onion
  • ¼ bell pepper, diced
  • Salt, pepper, and garlic powder to taste

Instructions

  1. Cut avocado in half, remove pit, and scoop flesh into a bowl.
  2. Mash avocado with a fork until mostly smooth.
  3. Add lemon or lime juice and mix to combine.
  4. Season with salt, pepper, and garlic powder; stir to combine.
  5. Gently fold in chicken, tomato, onion, and bell pepper.
  6. Divide mixture among lettuce leaves and serve immediately.
