- 500g boneless, skinless chicken breast, cut into thin strips
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, sliced
- 2 tbsp olive oil
- 2 tsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- Juice of 1 lime
- 6 medium flour tortillas
- Optional toppings: shredded cheese, sour cream, salsa, guacamole
- In a small bowl, mix chili powder, cumin, smoked paprika, garlic powder, salt, and black pepper.
- Toss chicken strips with half of the spice mix and 1 tbsp olive oil.
- Heat a large skillet over medium-high heat, add chicken, and cook for 5-6 minutes until cooked through. Remove and set aside.
- Add the remaining olive oil to the skillet, then sauté onion and bell peppers with the remaining spice mix for 4-5 minutes until tender-crisp.
- Return chicken to the skillet, add lime juice, and toss to combine.
- Warm tortillas in a dry pan or microwave.
- Fill each tortilla with chicken and vegetable mixture, add desired toppings, and wrap tightly.
Notes
- For extra flavor, marinate chicken in spices and lime juice for 30 minutes before cooking.
- Use whole wheat or gluten-free tortillas for a healthier option.
- Serve with a side of Mexican rice or salad for a complete meal.
