Chicken Quesadillas

A quick and flavorful Mexican-inspired dish featuring crispy tortillas filled with seasoned chicken, melted cheese, and optional veggies, perfect for a snack or meal.

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup bell peppers, diced (optional)
  • 1/2 cup onions, diced (optional)
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 4 large flour tortillas
  • 2 tbsp vegetable oil or butter
  • Sour cream, for serving (optional)
  • Salsa, for serving (optional)
  • Guacamole, for serving (optional)

Instructions

  1. In a large bowl, mix the shredded chicken with cumin, chili powder, garlic powder, salt, and pepper.
  2. Heat 1/2 tbsp oil or butter in a skillet over medium heat.
  3. Place one tortilla in the skillet and sprinkle a layer of both cheeses over half the tortilla.
  4. Add a portion of the seasoned chicken and optional vegetables over the cheese.
  5. Fold the tortilla in half and cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
  6. Remove from the skillet and let sit for 1 minute before cutting into wedges.
  7. Repeat with remaining tortillas and filling.
  8. Serve hot with sour cream, salsa, or guacamole.

Notes

  • You can use rotisserie chicken for a quicker option.
  • Add jalapeños for extra heat.
  • Swap in whole wheat tortillas for a healthier version.
  • Great for using up leftover chicken or veggies.
