- 2 cups cooked chicken, shredded
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup bell peppers, diced (optional)
- 1/2 cup onions, diced (optional)
- 1 tsp ground cumin
- 1/2 tsp chili powder
- 1/4 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 4 large flour tortillas
- 2 tbsp vegetable oil or butter
- Sour cream, for serving (optional)
- Salsa, for serving (optional)
- Guacamole, for serving (optional)
- In a large bowl, mix the shredded chicken with cumin, chili powder, garlic powder, salt, and pepper.
- Heat 1/2 tbsp oil or butter in a skillet over medium heat.
- Place one tortilla in the skillet and sprinkle a layer of both cheeses over half the tortilla.
- Add a portion of the seasoned chicken and optional vegetables over the cheese.
- Fold the tortilla in half and cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
- Remove from the skillet and let sit for 1 minute before cutting into wedges.
- Repeat with remaining tortillas and filling.
- Serve hot with sour cream, salsa, or guacamole.

- You can use rotisserie chicken for a quicker option.
