Chickpea Chicken Salad

A healthy and satisfying salad combining chickpeas and chicken with fresh veggies and a light dressing.

Ingredients

  • 1 cup cooked chickpeas
  • 2 cups cooked chicken breast, shredded
  • 1/2 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/2 bell pepper, diced
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika (optional)

Instructions

  1. In a large bowl, combine the chickpeas, shredded chicken, cucumber, red onion, bell pepper, and parsley.
  2. In a separate small bowl, whisk together olive oil, lemon juice, Dijon mustard, garlic powder, paprika (if using), salt, and pepper until smooth.
  3. Pour the dressing over the salad mixture and toss gently to combine.
  4. Chill in the refrigerator for 10-15 minutes to allow flavors to meld.
  5. Serve chilled, garnished with extra parsley or a sprinkle of paprika if desired.

Notes

  • Feel free to substitute the chicken with a plant-based protein for a vegetarian version.
  • Adjust the seasoning according to your taste preferences.
  • This salad can be stored in the fridge for up to 2-3 days.
