Cinnamon Pop Tarts

Homemade cinnamon pop tarts made with a buttery pastry and filled with a sweet cinnamon-brown sugar filling, then topped with a delicious cinnamon glaze.

  • 2 1/2 cups all-purpose flour
  • 1 tsp salt
  • 1 tbsp granulated sugar
  • 1 cup unsalted butter, cold and cubed
  • 68 tbsp ice water
  • 1/2 cup brown sugar
  • 1 tbsp ground cinnamon
  • 1 tbsp all-purpose flour (for filling)
  • 1 large egg (for egg wash)
  • 1 cup powdered sugar (for glaze)
  • 1 tsp ground cinnamon (for glaze)
  • 23 tbsp milk (for glaze)
  • 1/2 tsp vanilla extract

Instructions

  1. In a large bowl, whisk together flour, salt, and sugar. Cut in butter until the mixture resembles coarse crumbs.
  2. Add ice water, 1 tablespoon at a time, mixing until the dough just comes together. Divide into two disks, wrap, and chill for at least 1 hour.
  3. In a small bowl, mix brown sugar, cinnamon, and 1 tbsp flour for the filling.
  4. Roll out one dough disk on a floured surface to about 1/8-inch thickness. Cut into rectangles (about 3×4 inches).
  5. Place half the rectangles on a lined baking sheet. Brush with egg wash and add 1-2 tablespoons of filling in the center, leaving a border.
  6. Top with remaining rectangles, pressing edges with a fork to seal. Prick tops with a fork.
  7. Refrigerate for 30 minutes. Meanwhile, preheat oven to 375°F (190°C).
  8. Bake for 20-25 minutes or until golden brown. Let cool.
  9. Mix powdered sugar, cinnamon, milk, and vanilla to make the glaze. Spread over cooled pop tarts.

Notes

  • Make sure the butter stays cold for a flaky crust.
  • Pop tarts can be frozen before baking for longer storage.
  • Adjust glaze consistency by adding more milk or sugar.
