Cinnamon Pop Tarts

- 2 1/2 cups all-purpose flour
 
- 1 tsp salt
 
- 1 tbsp granulated sugar
 
- 1 cup unsalted butter, cold and cubed
 
- 6–8 tbsp ice water
 
- 1/2 cup brown sugar
 
- 1 tbsp ground cinnamon
 
- 1 tbsp all-purpose flour (for filling)
 
- 1 large egg (for egg wash)
 
- 1 cup powdered sugar (for glaze)
 
- 1 tsp ground cinnamon (for glaze)
 
- 2–3 tbsp milk (for glaze)
 
- 1/2 tsp vanilla extract
 
		 
	 
	
		
		
			
- In a large bowl, whisk together flour, salt, and sugar. Cut in butter until the mixture resembles coarse crumbs.
 
- Add ice water, 1 tablespoon at a time, mixing until the dough just comes together. Divide into two disks, wrap, and chill for at least 1 hour.
 
- In a small bowl, mix brown sugar, cinnamon, and 1 tbsp flour for the filling.
 
- Roll out one dough disk on a floured surface to about 1/8-inch thickness. Cut into rectangles (about 3×4 inches).
 
- Place half the rectangles on a lined baking sheet. Brush with egg wash and add 1-2 tablespoons of filling in the center, leaving a border.
 
- Top with remaining rectangles, pressing edges with a fork to seal. Prick tops with a fork.
 
- Refrigerate for 30 minutes. Meanwhile, preheat oven to 375°F (190°C).
 
- Bake for 20-25 minutes or until golden brown. Let cool.
 
- Mix powdered sugar, cinnamon, milk, and vanilla to make the glaze. Spread over cooled pop tarts.

- Make sure the butter stays cold for a flaky crust.
 
- Pop tarts can be frozen before baking for longer storage.
