Cranberry Orange Glazed Chicken

A flavorful and juicy chicken dish glazed with a sweet-tart cranberry orange sauce, perfect for a festive dinner or weeknight meal.

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh or frozen cranberries
  • 1/2 cup orange juice (freshly squeezed preferred)
  • 1/4 cup honey or maple syrup
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon orange zest
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper to taste
  • Fresh rosemary or thyme for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season chicken breasts with salt and pepper on both sides.
  3. Heat olive oil in a large oven-safe skillet over medium heat. Sear the chicken breasts for 2–3 minutes on each side until golden brown. Remove chicken and set aside.
  4. In the same skillet, add cranberries, orange juice, honey (or maple syrup), balsamic vinegar, orange zest, minced garlic, and cinnamon. Stir and simmer for 5–7 minutes, until cranberries begin to burst and sauce thickens slightly.
  5. Return the chicken to the skillet, spooning sauce over the top.
  6. Transfer the skillet to the preheated oven and bake for 20–25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  7. Remove from oven and let rest for 5 minutes. Garnish with fresh rosemary or thyme if desired.
  8. Serve warm with your favorite side dishes.

Notes

  • For extra flavor, marinate the chicken in orange juice and garlic for 1 hour before cooking.
  • Use boneless thighs if preferred for a juicier result.
  • This glaze works great with turkey or pork as well.
