Cranberry Orange Scones

Tender, buttery scones flavored with fresh orange zest and tart cranberries, perfect for breakfast or afternoon tea.

  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup dried cranberries (or fresh cranberries, chopped)
  • 1 tablespoon orange zest
  • 2/3 cup heavy cream (plus extra for brushing)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons coarse sugar (optional, for topping)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Cut in the cold butter with a pastry cutter or fork until the mixture resembles coarse crumbs.
  4. Stir in cranberries and orange zest.
  5. In a separate bowl, whisk together cream, egg, and vanilla extract.
  6. Pour wet ingredients into dry ingredients and gently stir until dough comes together.
  7. Turn dough onto a lightly floured surface and gently knead a few times. Shape into a 1-inch thick circle.
  8. Cut into 8 wedges and place on prepared baking sheet.
  9. Brush tops with cream and sprinkle with coarse sugar if desired.
  10. Bake for 18–22 minutes, or until golden brown.
  11. Cool slightly before serving warm.

Notes

  • For extra flavor, drizzle with a simple orange glaze made from powdered sugar and orange juice.
  • Use fresh cranberries for a more tart flavor, or dried cranberries for sweeter scones.
  • Do not overmix the dough to keep scones tender.
