Creamy Cucumber Yogurt Sandwiches

Light and refreshing sandwiches made with a creamy cucumber yogurt filling, perfect for a healthy snack or tea-time treat.

Ingredients

  • 1 cup plain Greek yogurt
  • 1 medium cucumber, peeled, seeded, and finely chopped
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon lemon juice
  • Salt to taste
  • Black pepper to taste
  • 8 slices whole grain or white sandwich bread

Instructions

  1. In a mixing bowl, combine Greek yogurt, chopped cucumber, dill, lemon juice, salt, and pepper. Mix well to form a creamy filling.
  2. Lay out the sandwich bread slices on a clean surface.
  3. Spread the cucumber yogurt mixture evenly on four of the slices.
  4. Top with the remaining bread slices to form sandwiches.
  5. Trim the crusts if desired and cut each sandwich into halves or quarters.
  6. Serve immediately or refrigerate until ready to serve.

Notes

  • For extra flavor, add a pinch of garlic powder or a dash of hot sauce to the filling.
  • Use whole wheat bread for added fiber.
  • Pat cucumber dry with a paper towel to prevent the filling from becoming watery.
