Creamy Mushroom Gnocchi

A rich and comforting Italian-inspired dish featuring pillowy gnocchi coated in a creamy mushroom sauce with garlic, herbs, and Parmesan cheese.

  • 500g potato gnocchi
  • 2 tbsp olive oil
  • 250g mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp dried thyme
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Cook the gnocchi according to package instructions until they float, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add sliced mushrooms and cook until golden and softened, about 5–6 minutes.
  3. Add minced garlic and dried thyme, cooking for another 1–2 minutes until fragrant.
  4. Pour in the heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until melted and sauce thickens.
  5. Add the cooked gnocchi to the skillet and toss to coat in the creamy mushroom sauce.
  6. Season with salt and pepper to taste, garnish with fresh parsley, and serve warm.

Notes

  • Use a mix of mushroom varieties for a deeper flavor.
  • For a lighter version, substitute half-and-half for the heavy cream.
  • Pair with garlic bread or a fresh green salad.
