200g pasta (your choice)
200g mushrooms, sliced
1 tablespoon olive oil
2 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 teaspoon salt (to taste)
1/4 teaspoon pepper (to taste)
1 tablespoon fresh parsley, chopped
1/4 cup vegetable broth or chicken broth
1 tablespoon butter
Instructions
Cook the pasta according to package instructions. Drain and set aside.
In a large pan, heat olive oil over medium heat. Add the mushrooms and sauté until golden brown and tender, about 5-7 minutes.
Add minced garlic to the pan and cook for an additional minute until fragrant.
Add vegetable or chicken broth to the pan and stir to combine, scraping up any bits stuck to the bottom of the pan.
Stir in the heavy cream, butter, salt, and pepper, and bring the mixture to a gentle simmer. Let it cook for 2-3 minutes until the sauce thickens slightly.
Mix in the grated Parmesan cheese and continue stirring until smooth and creamy.
Add the cooked pasta to the sauce and toss until well coated.
Serve the pasta in bowls, garnishing with fresh parsley.
Notes
Feel free to add more Parmesan cheese for a cheesier flavor.
For a lighter version, you can substitute the heavy cream with half-and-half or a plant-based cream.
For added protein, try adding grilled chicken or shrimp.
