Crispy Potato Skins
Crispy potato skins are a delicious appetizer or snack made from baked potatoes scooped out and filled with cheese, bacon, and toppings, then baked until golden and crunchy.

- 4 large russet potatoes
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1/4 cup sour cream
- 2 tablespoons chopped green onions
- Preheat oven to 400°F (200°C). Scrub the potatoes clean and pat dry.
- Bake the potatoes for 45–60 minutes until tender. Let cool slightly.
- Cut potatoes in half lengthwise and scoop out most of the flesh, leaving about 1/4 inch attached to the skin.
- Brush the potato skins with olive oil on both sides, season with salt and pepper, and place skin-side down on a baking sheet.
- Bake for 10 minutes, then flip and bake for another 5–10 minutes until crisp.
- Sprinkle cheese and bacon inside each potato skin and return to oven until cheese is melted, about 5 minutes.
- Remove from oven and top with sour cream and green onions before serving.
Notes
- You can save the scooped-out potato flesh for mashed potatoes or another recipe.
- Try topping with jalapeños or different cheeses for variety.
- For a lighter option, use Greek yogurt instead of sour cream.
