Crispy Potato Skins

Crispy potato skins are a delicious appetizer or snack made from baked potatoes scooped out and filled with cheese, bacon, and toppings, then baked until golden and crunchy.

Ingredients

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup sour cream
  • 2 tablespoons chopped green onions

Instructions

  1. Preheat oven to 400°F (200°C). Scrub the potatoes clean and pat dry.
  2. Bake the potatoes for 45–60 minutes until tender. Let cool slightly.
  3. Cut potatoes in half lengthwise and scoop out most of the flesh, leaving about 1/4 inch attached to the skin.
  4. Brush the potato skins with olive oil on both sides, season with salt and pepper, and place skin-side down on a baking sheet.
  5. Bake for 10 minutes, then flip and bake for another 5–10 minutes until crisp.
  6. Sprinkle cheese and bacon inside each potato skin and return to oven until cheese is melted, about 5 minutes.
  7. Remove from oven and top with sour cream and green onions before serving.

Notes

  • You can save the scooped-out potato flesh for mashed potatoes or another recipe.
  • Try topping with jalapeños or different cheeses for variety.
  • For a lighter option, use Greek yogurt instead of sour cream.
