Cucumber Dill Salad

A light and refreshing salad of thinly sliced cucumbers and fresh dill tossed in a tangy, creamy dressing.

Ingredients

  • 2 medium cucumbers, thinly sliced
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons fresh dill, finely chopped
  • 2 tablespoons sour cream
  • 1 tablespoon white vinegar (or lemon juice)
  • 1 teaspoon granulated sugar
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. In a large bowl, combine the sliced cucumbers, red onion, and chopped dill.
  2. In a small bowl, whisk together the sour cream, white vinegar, sugar, salt, and pepper until smooth.
  3. Pour the dressing over the cucumber mixture and toss gently to coat all pieces evenly.
  4. Cover and refrigerate for at least 10 minutes to allow flavors to meld.
  5. Give the salad a quick stir before serving. Enjoy chilled.

Notes

  • For a lighter version, substitute Greek yogurt for the sour cream.
  • Add a clove of minced garlic for extra flavor.
  • Can be made up to 2 hours ahead and stored, covered, in the refrigerator.
  • Serve as a side dish with grilled meats or sandwiches.
