Cucumber Sandwich Bites

Light, refreshing, and easy-to-make cucumber sandwich bites perfect for tea parties, picnics, or as an elegant appetizer.

Ingredients

  • 1 cucumber, thinly sliced
  • 8 slices white or whole wheat bread, crusts removed
  • 4 oz (115g) cream cheese, softened
  • 2 tbsp fresh dill, chopped
  • 1 tbsp mayonnaise
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. In a small bowl, mix cream cheese, mayonnaise, dill, garlic powder, salt, and pepper until smooth.
  2. Spread the cream cheese mixture evenly over each bread slice.
  3. Layer thin cucumber slices on half of the bread slices.
  4. Top with the remaining bread slices to form sandwiches.
  5. Cut sandwiches into small squares or triangles for bite-sized pieces.
  6. Serve chilled or at room temperature.

Notes

  • For extra freshness, use English cucumbers since they have fewer seeds.
  • Chilling the sandwiches before cutting makes them easier to slice neatly.
  • Can substitute cream cheese with a dairy-free spread for a vegan option.
