Dill Pickle Pasta Salad

A tangy, creamy, and flavorful pasta salad loaded with dill pickles, fresh herbs, and a savory dressing. Perfect for picnics, potlucks, or a refreshing side dish.

  • 12 oz rotini pasta
  • 1 cup chopped dill pickles
  • 2/3 cup shredded cheddar cheese
  • 1/2 cup chopped red onion
  • 1/2 cup chopped fresh dill
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tbsp pickle juice
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and rinse with cold water to cool.
  2. In a large mixing bowl, combine chopped dill pickles, cheddar cheese, red onion, and fresh dill.
  3. In a separate bowl, whisk together mayonnaise, sour cream, pickle juice, Dijon mustard, salt, and pepper.
  4. Add the cooled pasta to the mixing bowl with the other ingredients.
  5. Pour the dressing over the salad and toss until well combined.
  6. Refrigerate for at least 1 hour before serving to allow flavors to meld.

Notes

  • Use baby dill pickles for extra crunch and flavor.
  • Adjust pickle juice to taste for tanginess.
  • Best served chilled.
