Do Nothing Cake (Lazy Daisy Cake)

Do Nothing Cake, also known as Lazy Daisy Cake, is a vintage, incredibly moist and easy-to-make dessert featuring crushed pineapple and a luscious coconut-pecan topping. It’s a one-bowl, no-fuss cake perfect for potlucks or weeknight treats.

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 2 large eggs
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1 can (20 oz) crushed pineapple, with juice
  • 1/2 cup (1 stick) unsalted butter
  • 1 cup granulated sugar (for topping)
  • 2/3 cup evaporated milk
  • 1 cup shredded sweetened coconut
  • 1 cup chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large mixing bowl, combine flour, sugar, eggs, baking soda, salt, vanilla, and crushed pineapple with juice. Mix until well combined.
  3. Pour the batter into the prepared baking dish and spread evenly.
  4. Bake for 30–35 minutes or until a toothpick inserted into the center comes out clean.
  5. While the cake is baking, prepare the topping: In a saucepan over medium heat, combine butter, sugar, and evaporated milk. Bring to a boil and cook for 2–3 minutes, stirring constantly.
  6. Remove from heat and stir in coconut and pecans.
  7. Pour the warm topping over the hot cake immediately after removing it from the oven.
  8. Let the cake cool slightly before serving. Can be served warm or at room temperature.

Notes

  • This cake is best served the same day but can be stored in the refrigerator for up to 3 days.
  • Toasting the pecans beforehand enhances their flavor.
  • You can replace pecans with walnuts or leave them out for a nut-free version.
