- 2 cups all-purpose flour
- 2 cups granulated sugar
- 2 large eggs
- 1 tsp baking soda
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1 can (20 oz) crushed pineapple, with juice
- 1/2 cup (1 stick) unsalted butter
- 1 cup granulated sugar (for topping)
- 2/3 cup evaporated milk
- 1 cup shredded sweetened coconut
- 1 cup chopped pecans
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large mixing bowl, combine flour, sugar, eggs, baking soda, salt, vanilla, and crushed pineapple with juice. Mix until well combined.
- Pour the batter into the prepared baking dish and spread evenly.
- Bake for 30–35 minutes or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the topping: In a saucepan over medium heat, combine butter, sugar, and evaporated milk. Bring to a boil and cook for 2–3 minutes, stirring constantly.
- Remove from heat and stir in coconut and pecans.
- Pour the warm topping over the hot cake immediately after removing it from the oven.
- Let the cake cool slightly before serving. Can be served warm or at room temperature.
Notes
- This cake is best served the same day but can be stored in the refrigerator for up to 3 days.
- Toasting the pecans beforehand enhances their flavor.
- You can replace pecans with walnuts or leave them out for a nut-free version.
