Fluffy Protein Pancakes

These fluffy protein pancakes are a healthy and delicious way to start your day, packed with protein and perfect for a post-workout meal or hearty breakfast.

Ingredients

  • 1 cup oat flour
  • 1 scoop vanilla protein powder
  • 1 tsp baking powder
  • 1/2 tsp cinnamon (optional)
  • 1/4 tsp salt
  • 2 eggs
  • 1/2 cup unsweetened almond milk (or milk of choice)
  • 1 mashed banana
  • 1 tsp vanilla extract
  • Coconut oil or butter for cooking

Instructions

  1. In a large bowl, mix together oat flour, protein powder, baking powder, cinnamon, and salt.
  2. In another bowl, whisk together eggs, almond milk, mashed banana, and vanilla extract until well combined.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Heat a non-stick skillet over medium heat and lightly grease with coconut oil or butter.
  5. Pour 1/4 cup of batter per pancake onto the skillet. Cook for 2-3 minutes or until bubbles form on top.
  6. Flip and cook for another 1-2 minutes, or until golden and cooked through.
  7. Repeat with remaining batter. Serve warm with your favorite toppings.

Notes

  • Use ripe bananas for natural sweetness.
  • Can substitute oat flour with whole wheat or almond flour if desired.
  • Store leftovers in the fridge for up to 3 days or freeze for longer storage.
