Frijoles Refritos (Refried Beans)

Frijoles refritos, or refried beans, are a staple Mexican dish made from cooked and mashed beans, typically pinto or black beans, fried with onions, garlic, and spices until creamy and flavorful.

Ingredients

  • 2 cups cooked pinto beans (or black beans)
  • 1/2 cup bean cooking liquid or water
  • 2 tbsp lard or vegetable oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 tsp ground cumin
  • Salt to taste

Instructions

  1. Heat the lard or oil in a large skillet over medium heat.
  2. Add the chopped onion and sauté until softened and translucent, about 5 minutes.
  3. Stir in the garlic and cumin; cook for another 1–2 minutes until fragrant.
  4. Add the cooked beans and about 1/2 cup of their cooking liquid.
  5. Use a potato masher or back of a spoon to mash the beans to your desired consistency.
  6. Continue cooking, stirring frequently, until the mixture thickens and becomes creamy, about 5–7 minutes.
  7. Season with salt to taste and serve warm.

Notes

  • You can substitute butter, bacon fat, or olive oil for the lard.
  • For a smoother texture, blend the beans before frying.
  • Use black beans for a slightly different flavor profile.
  • Can be stored in the refrigerator for up to 4 days or frozen for longer storage.
