- 1/4 cup fresh lemon juice
 
- 2 teaspoons lemon zest

- 1 teaspoon salt

- 1 cup plain Greek yogurt
 
- 1/2 cucumber, grated and drained

- 1 tablespoon chopped fresh dill or mint (for tzatziki)

- In a large bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, salt, and pepper.
 
- Add the chicken pieces to the marinade, cover, and refrigerate for at least 1 hour, preferably 2-4 hours.
 
- If using wooden skewers, soak them in water for 30 minutes before grilling.
 
- Thread the marinated chicken pieces onto skewers.
 
- Preheat grill or grill pan to medium-high heat. Lightly oil the grates.
 
- Grill skewers for 10–12 minutes, turning occasionally, until the chicken is cooked through and has grill marks.
 
- While the chicken is grilling, prepare the tzatziki sauce by mixing Greek yogurt, grated cucumber, olive oil, lemon juice, garlic, and dill or mint in a bowl. Season with salt to taste.
