- 4 slices of bread
- 4 slices of cheddar cheese
- 2 tbsp butter, softened
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 2 cups vegetable broth
- 1/2 cup heavy cream
- 1 tsp sugar
- Salt and pepper to taste
- Fresh basil leaves for garnish (optional)
- Butter one side of each bread slice. Place cheese slices between two slices of bread, buttered sides facing out.
- Heat a skillet over medium heat and cook sandwiches until golden brown on both sides and cheese is melted. Keep warm.
- In a pot, heat olive oil over medium heat. Add onion and cook until softened.
- Add garlic and cook for 1 minute until fragrant.
- Stir in crushed tomatoes, vegetable broth, and sugar. Simmer for 10–15 minutes.
- Blend soup with an immersion blender until smooth.
- Stir in heavy cream and season with salt and pepper to taste.
- Serve hot soup with grilled cheese sandwiches, garnished with basil if desired.

- For extra flavor, use a mix of cheeses such as mozzarella and gruyère.
- You can make the soup vegan by using plant-based cream and butter.
