Grilled Cheese and Tomato Soup

A comforting and classic pairing of crispy, golden grilled cheese sandwiches served with creamy, tangy tomato soup — perfect for lunch or a cozy dinner.

Ingredients

  • 4 slices of bread
  • 4 slices of cheddar cheese
  • 2 tbsp butter, softened
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 2 cups vegetable broth
  • 1/2 cup heavy cream
  • 1 tsp sugar
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Butter one side of each bread slice. Place cheese slices between two slices of bread, buttered sides facing out.
  2. Heat a skillet over medium heat and cook sandwiches until golden brown on both sides and cheese is melted. Keep warm.
  3. In a pot, heat olive oil over medium heat. Add onion and cook until softened.
  4. Add garlic and cook for 1 minute until fragrant.
  5. Stir in crushed tomatoes, vegetable broth, and sugar. Simmer for 10–15 minutes.
  6. Blend soup with an immersion blender until smooth.
  7. Stir in heavy cream and season with salt and pepper to taste.
  8. Serve hot soup with grilled cheese sandwiches, garnished with basil if desired.

Notes

  • For extra flavor, use a mix of cheeses such as mozzarella and gruyère.
  • You can make the soup vegan by using plant-based cream and butter.
  • Grilled cheese is best served immediately for maximum crispiness.
