Grilled Peach and Halloumi Salad with Lemon-Pesto Dressing

A refreshing summer salad featuring sweet grilled peaches, salty halloumi cheese, and a zesty lemon-pesto dressing. Perfect as a light lunch or side dish.

  • 2 ripe peaches, halved and pitted
  • 200g halloumi cheese, sliced
  • 4 cups mixed salad greens
  • 1/4 cup fresh basil leaves
  • 1/4 cup fresh mint leaves
  • 1/4 cup cherry tomatoes, halved
  • 2 tbsp olive oil (for grilling)
  • Salt and pepper to taste
  • 2 tbsp pesto
  • 1 tbsp lemon juice
  • 1 tsp honey
  • 1 tbsp extra virgin olive oil (for dressing)

Instructions

  1. Preheat a grill or grill pan over medium-high heat.
  2. Brush the peach halves and halloumi slices with olive oil.
  3. Grill peaches for 2–3 minutes per side until charred and tender. Grill halloumi for 1–2 minutes per side until golden and softened.
  4. In a small bowl, whisk together pesto, lemon juice, honey, and extra virgin olive oil to make the dressing.
  5. In a large bowl or platter, combine salad greens, basil, mint, and cherry tomatoes.
  6. Slice grilled peaches and halloumi, and add them to the salad.
  7. Drizzle with lemon-pesto dressing and toss gently.
  8. Season with salt and pepper to taste and serve immediately.

Notes

  • Use firm but ripe peaches for best grilling results.
  • Substitute arugula or spinach for mixed greens if desired.
  • Dressing can be made ahead and stored for up to 3 days.
