Grilled Peach and Halloumi Salad with Lemon-Pesto Dressing

- 2 ripe peaches, halved and pitted
- 200g halloumi cheese, sliced
- 4 cups mixed salad greens
- 1/4 cup fresh basil leaves
- 1/4 cup fresh mint leaves
- 1/4 cup cherry tomatoes, halved
- 2 tbsp olive oil (for grilling)
- Salt and pepper to taste
- 2 tbsp pesto
- 1 tbsp lemon juice
- 1 tsp honey
- 1 tbsp extra virgin olive oil (for dressing)
- Preheat a grill or grill pan over medium-high heat.
- Brush the peach halves and halloumi slices with olive oil.
- Grill peaches for 2–3 minutes per side until charred and tender. Grill halloumi for 1–2 minutes per side until golden and softened.
- In a small bowl, whisk together pesto, lemon juice, honey, and extra virgin olive oil to make the dressing.
- In a large bowl or platter, combine salad greens, basil, mint, and cherry tomatoes.
- Slice grilled peaches and halloumi, and add them to the salad.
- Drizzle with lemon-pesto dressing and toss gently.
- Season with salt and pepper to taste and serve immediately.
Notes
- Use firm but ripe peaches for best grilling results.
- Substitute arugula or spinach for mixed greens if desired.
- Dressing can be made ahead and stored for up to 3 days.
